This is Blue Star Cafe.

This is my best approximation of whatever Lindsey ordered for breakfast there. It goes by the name "Tofu Scramble." (Imagine the image above, but replace that natural yellow with a neon yellow-green.) I'd just like to take this opportunity to thank the LORD that I am not a vegan.

Linds and I were under the impression that the scramble would be made of eggs and include tofu pieces. Untrue. It consists of grated tofu died radioactive yellow, sauteed with vegetables and veggie sausage. Eh well... you live and learn, right?

Another post to come soon, but I just wanted to warn you all now before you order this dish.
